SALVA CREMASCO PDO

Salva Cremasco is a typical PDO cheese in Crema and its territory. Its ingredients are: full-fat milk, rennet, probiotics, salt, oil and aromatic herbs, used during its aging. Among them, the most important one is the rosemary that characterizes its flavour. Traditionally, Salva Cremasco is served together with “tighe”, green peppers in oil and in vinegar, but some prefer matching it with Mostarda, Acacia honey or quince jam. Sometimes it can also be found together with “pipèto”, a purée made with savoy cabbage, garlic and bread crumbs.
