Provolone Valpadana is a PDO cheese belonging to pasta filata cheese family. There are two types of Provolone cheese: the sweet one, with a delicate flavour, and the spicy one, with a strong flavour. The reason behind this difference is the aging process and the rennet used to produce it. Although, pasta filata cheese are usually produced in the South of Italy, Provolone Valpadana has its origin in the Po Valley in 1861, after the Unification of Italy.
